• Hukilau Mixed Grill • A sampling of Island grilled seafood and sugar cane skewered shrimp. Ask your server for the daily offerings and preparation
• Walu • Escalar, sometimes referred to as Hawaiian Butterfish. Rich flavor and moist tender texture, “the foie gras of the sea”
• Mahi Mahi • Dorado, this most popular of all Hawaiian fish is light in flavor and flaky in texture
• Opah • Hawaiian Moonfish, sweet, full flavor and tender texture are the hallmarks of this Island favorite
• Ahi • Refers to Big-Eye or Yellowfin Tuna. Full, meaty flavor with a firm, red flesh. We buy only sashimi quality. This fish is often served medium-rare, order it to desired temperature as you would your favorite steak
• Hebi • Spearfish, this billfish has firm but tender flesh similar to Ono. It has a full flavor.
• Ono • Ono in Hawaiian means delicious! The Wahoo is just that. Its delicate, flaky texture and sweet taste make it another Island favorite
• Opakapaka • Pink Snapper, this difficult catch is typically found in waters three to four hundred feet deep. Wonderful, delicate, sweet flavor
